Ingredients

  • 2 pounds boneless, skinless chicken breasts about 4
  • 1 cup chicken stock, low-sodium chicken broth, or water

Equipment

  • Slow cooker
  • Forks

Method

  1. Place the chicken breasts and your chosen liquid into a 4-quart or larger slow cooker.
  2. Cover and cook on LOW for 4 to 5 hours, or on HIGH for 2 to 3 hours, until the chicken is tender and reaches an internal temperature of 165°F.
  3. Transfer the chicken to a cutting board or plate. Use two forks to shred the meat while it is still warm. If you are not using it right away, store the shredded chicken with some of the cooking liquid to keep it moist.
