- In a large bowl, sift together the flour, baking powder, salt, and sugar. Make a well in the middle and pour in the milk, egg, butter, and vanilla extract (if using). Break up the egg first with a fork, then combine the flour from the outside in until just combined and mostly smooth.
- Heat a non-stick griddle or large pan over medium-high heat. Grease, spray, or melt butter on the hot surface. If using an electric griddle, heat it between 300 and 350F.
- Pour ¼ cup of batter onto the greased pan. Cook for about 2 minutes, until the edges look defined and bubbles form. Flip the pancakes and cook for another minute on the other side. Do not press down on the pancake after flipping, as this can lead to denser pancakes and undercooked batter.
- Remove the pancakes from the pan and keep them warm while you cook the remaining batter.
- Plate a few pancakes, top with your favorite toppings and syrups.
