Method
- Preheat your oven to 400F (200C).
- Season the chicken thighs on both sides with salt and black pepper. Place the chicken thighs skin-side up in a baking pan. Sprinkle the tops with garlic powder and chopped herbs. Arrange the pressed garlic cloves around the chicken.
- Place the pan on the center rack of the preheated oven and roast uncovered for 45 minutes. Then, lower the oven temperature to 325F (160C) and cook for another 10 minutes. The chicken is done when an internal thermometer reads 165F (74C) and the skin is golden and crispy.
- To keep the chicken warm, turn off the oven and cover the pan with foil until you are ready to serve.
Notes
This recipe is great for meal prep. The leftovers can be used in salads, sandwiches, or other dishes.
